Lulu's Cucina Zucchini Bread Preheat ovent to 350,
3 cups all pupose flour 1 teaspoon salt (don't skimp!) 1 teaspoon baking soda 2 teaspoons cinnamon 1 teaspoon nutmeg (that's a secret!) 1/4 teaspoon baking soda 3 eggs 1 cup white sugar 1 cup packed brown sugar (surprise!) 3 teaspoons vanilla abstract (yes, 3 teaspoons!) 1 cup vegetable oil 3 cups grated garden fresh zucchini, squeezed dry 1 cup chopped walnut (can be left out, but why?) 1/2 cup raisin (can be left but that would be sad)
Mix dry ingredients well in one bowl, gently stir wet ingredients in another bowl, including zucchini. Gently combine one bowl into the other. Divide into two ungreased bread pans, bake for 65 to 75 minutes or until toothpick comes out clean. Remove from oven, let rest 10 minutes, remove from pan!
